Bizan, Japan gastronomic Issé


It floats on Bizan , a hint of Kaiseki as in the alleys of Kyoto!

Bizan is one of the restaurants of the creator of the empire Isse, Toshiro Kuroda
, located in the middle of the Japanese Saint Anne, Paris.


It aims to make kaiseki, the " kitchen to be together "
that respects the art of arrangement of flavors, appearances,
textures and colors of each ingredient.
This fresh and seasonal cuisine in a visual harmony and taste,
presented in delicate dishes and adapted to each dish
evokes the world of animals and plants around us.

Bizan created in 2004, reopened after renovation in summer 2010.
Masahiro Adachi, sushi chefs, who served at the banquet
enthronement of the Emperor of Japan is now the master
culinary scene.

Past the sliding glass door, entered your head through the Noren,
then pulled you into seclusion wood, you're in Japan.
The teacher officiates in the downstairs room, in a calm and a palpable rigor.

Light and delicate lemon soup shitake mushrooms, enoki and nameko.

Hassun (八寸)
Prime seasonal dish with a mouthful of foie gras fondant yuzu

and a sweet sauce over omelet

Tome-wan (止 碗) Miso soup with clams



Tea with filtered ice


Chirachi
lightly vinegared rice bowl and covered with pearly fish Raw
St. Jacques raw salmon eggs and salted plum,
decorated with a shiso leaf and lime.
It is served with fresh wasabi root to grate yourself
and pickled ginger lemon house (a true happiness)


Mizumono (水 物)
excellent dessert with ice tea Matcha
creamy not too milky and slightly sweet with fresh strawberries
(not the season ...) and a few cookies crumble.


Note that for the main course, you have the choice of nigiri sushi, the Chirachi tekka or donation. (For that day).

is your travel is finished but you can always remake the world
finishing emptying gradually your cast iron teapot,
filled with tea genmatcha the taste of toasted wheat .
